Rice:
350 g basmati rice
About 1 liter of boiled water
3 small turmeric roots, thinly sliced
2 medium onions, finely diced *
4 stalks spring onions, sliced*
A handful of parsley, finely chopped*
A handful of black olives
4 tbsp olive oil
1 tbsp pumpkin seed oil
- Set aside half of these ingredients as they will be mixed into the cooked rice.
Heat a pot without a lid over medium heat.
Half of the ingredients are first fried one by one (as in the video) and finally the rice is added and fried for about 3 minutes. Don’t let it burn. The pot should not be covered!!!
Rice is thirsty!!! Carefully pour the hot boiled water over the rice until it covers and let it cook. As soon as the water has evaporated, add more. In between, gently fluff the rice with tweezers or the tips of a fork. After the third time the rice should be cooked, if not repeat it again. The rice should remain crispy.
Yogurt:
300 ml yogurt
2 stalks of spring onions
A handful of chopped parsley and mint
2 tbsp olive oil
3 tbsp lemon juice
Salt
Black pepper
